Recipe: Peanut Butter Cupcakes With Frosting

Cupcakes are my weakness. Especially if it some kind of chocolate or peanut butter flavour and this recipe has the best of both! They are double chocolate cupcakes with a peanut butter filling and a peanut butter buttercream.

These mouthwatering, rich and delicious cupcakes are so easy to make but still look very impressive. If you want to treat your dinner guests or in the mood for an indulgent afternoon treat, these are the cupcakes you should make. 

Ingredients (makes 12):

For the cupcakes -
140g plain flour
185g caster sugar
30g cocoa powder
40g chocolate chips
½ tsp bicarbonate of soda
½ tsp salt
125g buttermilk
120ml cold brewed coffee
100ml vegetable oil
1 medium egg

For the filling -
115g crunchy peanut butter
115g icing sugar
20g butter
a pinch of salt

For the buttercream - 
200g icing sugar
70g butter
50g smooth peanut butter


Start by mixing the flour, sugar, cocoa powder, salt and bicarbonate of soda together. After they are thoroughly mixed you can add the oil, buttermilk and egg. 

To make the cold brewed coffee, simply mix one heaped teaspoon of coffee with 120ml of water. Add this to the mixture. The coffee brings out the chocolate flavour and is almost undetectable after it is cooked.

At this point, the mixture should be fairly runny but not too watery.

Just before popping into the cupcake cases, stir in the chocolate chips. Make sure to fill the cases about ⅓ of the way.

Next, put into a preheated oven for 15-25 minutes at 150 degrees.

To make the filling you have to mix the peanut butter and butter together. Make sure there are no lumps or butter blobs! We went through chaos trying to get them out (melted the peanut butter and butter fully and then put it in the fridge to solidify and then mixed it again). 

Add the icing sugar and salt and mix until it forms a thick cookie like dough. 

Once your cupcakes are baked and cooled, cut a circle out of the cupcake so that it goes half way through the cake. You can then stuff the filling into these holes. How big or small you do them is up to you.

To make the buttercream frosting, blend all of the ingredients together and add a dash of milk to make it a texture that would be easy to pipe. 

Then all you have to do is frost your cupcakes and decorate with your desired toppings. 
We used peanut butter Oreos and a bit of the crushed biscuit too.
