Biscoff Cake Recipe

Continuing the food and baking theme I seem to have going on right now, I thought I would share this recipe. I love Biscoff, of course, and I wanted to make an actual cake with Biscoff flavoured frosting (I made cupcakes last time - recipe post here).

Also, might I add, that this recipe doesn't have any chocolate in it (apart from a dusting of cocoa powder) - wahey!

Here is the recipe for this Biscoff cake that tastes so delicious!





Preheat the oven to 180°c and prepare two 7-inch sandwich tins with greaseproof paper.

Start by mixing the room temperature butter with the sugar. Add in the eggs, flour and baking powder until they are all well incorporated.

Divide the mixture into the two lined sandwich tins and bake in the oven for about 25 minutes or until fully baked. 

Make the buttercream by mixing the Biscoff spread, butter, sugar and double cream together until the mixture is light and fluffy so it is spreadable. If it doesn't come together at this point, add more sugar until it is looking a bit better.

After both the cakes are baked and completely cool, sandwich the buttercream between the cakes in a thin layer and then cover the entire cake with the frosting too.

With the entire cake covered you can decorate! I decided to go for five blobs of the buttercream with half a Biscoff biscuit on each. Then a dusting of cocoa powder and icing sugar to top it off. 


And there you go - a Biscoff cake. Yum!
