Recipe: Cherry Bakewell Cupcakes



I've been doing a bit of baking lately (as you may have noticed from my Instagram) so I thought I'd share one of the recipes on my blog this week. These cherry bakewell cupcakes are a favourite with family and friends. If you enjoy cherries and love icing, this one is definitely for you!



Ingredients

For the cupcakes:
200g unsalted butter, at room temperature
200g caster sugar
3 eggs
230g self raising flour
1 tsp vanilla extract
1 tsp baking powder
200g glacé cherries
Splash of milk

To decorate:
100g icing sugar
Water
6 glacé cherries, halved



Method

Make sure to preheat your oven to 180°C before getting started. Also prep your cupcake tin with 12 cases.

Mix together the butter and sugar until the mixture is light and fluffy. Next, add the eggs one by one followed by the flour and vanilla extract. Lastly add the baking powder, cherries (chopped into quarters) and a splash of milk to form a wet batter. 

Evenly distribute the mixture between the 12 cupcake cases and bake for 35-40 mins until the cupcakes are golden in colour. I like to use the knife test to check if the inside is done too. Simply pop a knife in the cupcake and if it comes out clean, it's baked. 

While the cupcakes are cooling down, make a thick glossy icing using the sugar and water. When the cupcakes are ready, add the icing and top with a cherry. I half them to make it easier to stay on. 


And voila, you have your cherry bakewell cupcakes- enjoy!
