The Only Pancake Recipe You Need



With Pancake Day around the corner, I thought I'd share my go-to pancake recipe that makes a perfect batch every time! Mark your calendars (25th February) so you can wow your friends, family or colleagues with delicious pancakes for the big day.

This recipe makes fluffy, American style pancakes but I'm sure it would be totally adaptable to make crepes, if that is what you prefer.



Ingredients:
1 cup plain flour
2 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1 cup milk
2 tbsp butter (melted) or vegetable oil
1 large egg
Toppings of your choice





I think the secret to getting the perfect pancakes is in the recipe as well as the technique. I use butter to cook my pancakes rather than oil and have the temperature set on a medium heat.

I transfer the pancake mix into a measuring jug so pouring it into the pan is easy and you can get equal sized portions. I also wait for the air holes to appear on the pancakes before flipping so only do one turn rather than multiple.
