Mini Egg Rocky Road | Easter Baking

I've been obsessed with making rocky road recently, probably because it's such a quick and easy recipe that is easily adaptable to include any extra chocolate, like Mini Eggs! With Easter around the corner and Mini Eggs being stocked on the supermarket shelves, I thought it would be a tasty treat to put the two together... I wasn't wrong!

Here is the recipe so you can recreate and enjoy.

Ingredients

  • 150g milk chocolate
  • 150g dark chocolate
  • 80g mini marshmallows
  • 250g plain digestive biscuits
  • Mini Eggs, as much as you'd like
  • 2 tbsp golden syrup
  • 150g unsalted butter

Recipe
  1. Start by melting the butter, chocolate and golden syrup together on a medium heat
  2. Once all melted and combined, set aside to avoid burning
  3. Crush your digestives and add into the chocolate mix
  4. Stir through your Mini Eggs and marshmallows until well combined
  5. Line a tin with greaseproof paper and pour the Rocky Road mixture in
  6. Level out ensuring all edges are filled and chill in the fridge overnight
  7. Cut it up into slices the next day and enjoy!
