I love a cookie recipe and when I'm looking to whip up something quickly, I love taking a cookie dough ball out of the freezer and into the oven so I can have a warm gooey cookie to enjoy! This recipe is simple, easy and of course freezable so you can enjoy on-demand. You can also bake it a little longer or shorter depending on how you'd like to enjoy it - traditional cookie dough style or crunchy cookies.
Ingredients:
- 200g unsalted butter (at room temperature)
- 300g caster sugar
- 1 large egg
- 325g self raising flour
- A dash of milk (if necessary)
- 400g of the chocolate of your choice (I like to do a mix of milk and white or milk and dark!)
Recipe:
- Mix together the butter and sugar until light and fluffy
- Add in the egg and flour until the mixture comes together
- If the mixture is quite thick, add a splash of milk to loosen it up, the mixture should be rollable
- Add in the chocolate pieces
- Roll up the mixture into dough balls - the bigger the balls, the gooey-er they will be when baked
- Place the dough on a lined tray or plate and put into freezer for a few hours (or store for a couple of months)
- When you'd like to enjoy, pop on a baking sheet and bake in the oven at 200℃ for around 12 minutes or until baked on the outside and soft in the middle
- Once baked, take out the oven and let cool on the side for a few minutes
- Enjoy!
