Recipe: The Ultimate Chocolate Cake

When I shared a quick snap of what was left of this cake on my Instagram a couple of weeks back, I've never had so many people ask me for the recipe! This cake is the most indulgent, rich and chocolatey cake I've made and it's exactly what I need for the ultimate night-in. Don't forget to send me a photo if you make this!


For the cake
225g unsalted butter
225g caster sugar
4 eggs
250g self--raising flour
50g cocoa powder
2 tsp baking powder
2 tsp of coffee in 150ml water (cooled)

For the frosting
250g unsalted butter
440g icing sugar
60g cocoa powder


  1. Mix together the sugar and butter until it is light and fluffy
  2. Add in the eggs, one by one, followed by the flour, cocoa powder and baking powder
  3. Once combined, pour in the cold coffee water (the coffee flavour helps enhance the chocolate and isn't detectable after baking)
  4. Split the mixture between two baking tins (or one and you can cut in half after) and bake on 180°C for 20-25 mins
  5. Whilst the cake is cooling, combine the frosting ingredients together until thick and fluffy
  6. Cover the tops of each cake, stack them and spread the remainder of the frosting around the edges
  7. Enjoy with a hot cup of tea or coffee!
