I've been obsessed with making rocky road recently, probably because it's such a quick and easy recipe that is easily adaptable to include any extra chocolate, like Mini Eggs! With Easter around the corner and Mini Eggs being stocked on the supermarket shelves, I thought it would be a tasty treat to put the two together... I wasn't wrong!
Here is the recipe so you can recreate and enjoy.
Ingredients
- 150g milk chocolate
- 150g dark chocolate
- 80g mini marshmallows
- 250g plain digestive biscuits
- Mini Eggs, as much as you'd like
- 2 tbsp golden syrup
- 150g unsalted butter
Recipe
- Start by melting the butter, chocolate and golden syrup together on a medium heat
- Once all melted and combined, set aside to avoid burning
- Crush your digestives and add into the chocolate mix
- Stir through your Mini Eggs and marshmallows until well combined
- Line a tin with greaseproof paper and pour the Rocky Road mixture in
- Level out ensuring all edges are filled and chill in the fridge overnight
- Cut it up into slices the next day and enjoy!
